Flash freezing refers to the process in various industries whereby objects are frozen quickly by subjecting them to cryogenic temperatures with either direct or indirect contact with liquid nitrogen -(320.8•F)  This freezing process using Cryogenic Blast Chillers results in ice crystals formed from intra and extracellular water, and subsequent crystal growth.  Flash freezing via Cryogenic Blast Chillers is used in the food industry to quickly freeze perishable food items.  The freezing speed directly influences influences the nucleation process and ice crystal size.  Decreased growth of the initial ice crystal is a result of a high heat removal rate quickly.  The allows for smaller ice crystals than normal blast chilling and causes less damage to cell membranes of products.

The Moduline Cryogenic Blast Chillers give you total control over product freezing with the ability to choose "Chill" or "Flash Freeze". In addition it also gives you the ability to choose "Automatic" or "Manual" programming modes. Manual program modes allow you to control the desired temperature of the cavity, desired temperature of the product, and the percentage of liquid nitrogen that is mixed into the cavity, which allows you to control the quickness of the chill. The difference between blast chilling in a normal blast chiller versus a cryogenic blast chiller is up to 80% quicker, sometimes greater, depending on products. Most products that take 45 minutes in a blast chiller now take 15 in a cryogenic blast chiller.
